VEGETABLE LASAGNE

  GRANNY LINDA & WILLA'S   VEGETABLE LASAGNE  Roast Veg for 20 mins in Olive oil.  VEG: Broccoli Aubergine Cauliflower  Carrots Courgettes Onions Red pepper White sauce made with semi skimmed milk. Mix: A tin of tomatoes (chopped) and a jar of Lloyd Grossman tomato and basil ragu (low sugar) Stir the roasted veg into the tomato sauce, layer with lasagne sheets and white sauce, ending with white sauce. Sprinkle on grated cheese.  HOME MADE CHICKEN NUGGETS Yesterday Willa had friends over for their tea.  We had chicken ramen, and home made chicken nuggets, chips and 'picky' salad sticks of carrot, peppers and cucumber, and popcorn trail mix.  They also had a scoop of ice cream each for pudding. Willa's auntie Emily gave us a recipe for home made chicken burgers, so we decided to adapt them into nuggets to make it a bit more 'picky' food. The chicken nuggets vanished fast, and the lasses said they liked it, but they are all very polite so think they might have said that whether they did or not :)  RECIPE Chicken fillets to suit amount feeding, bashed before chopping (3 chopped up fillets for us but I would make 4 next time) Paprika (roughly 2 teaspoons) Cornflakes (medium bowl full, crushed) 2 beaten eggs Salt  Pepper  Method: Bash the chicken fillets to make them more tender.  Chop into bite size bits.  Dip in egg.   For the crumb mixture just crush the cornflake...

  BIRTHDAY FANCIES  Life is all about balance, and we need to celebrate the good times!  Willa had been busy cooking earlier in the day so Nina took full charge of the cupcakes. Nina made banana and chocolate chip cupcakes.  Recipe below. To make 12 cupcakes 3 bananas 50g unsalted butter 180g porridge oats 1 tsp baking powder 1 tsp baking soda 1 large egg 1/2 table spoon of maple syrup  1/2 tsp vanilla extract 130g dark chocolate chips Method:  Mash the bananas, add the melted butter, egg, and vanilla extract, maple syrup and mix well. Blend the porridge oats until smooth. add the baking soda and baking powder and mix well.   Slowly stir in the oat mix until combined, add a splash of milk if mixture too dry.   Finally add in the dark chocolate chips and spread between 12 muffin cases.  Granny Linda made the Vanilla ones.  We had to have one of each so we could rate them :)  Low Calorie Vanilla cupcakes   6 oz SR flour...

  LENTIL SOUP Since we had a whole chicken to use up yesterday, we made lentil soup.  I didn't measure out the ingredients which was a shame because Willa thought it was 'too runny' so next time I will need more than the 1 mug of lentils that I used for the size of my pot.   Personally I really liked the taste - lentil soup on chicken is something that I associate with comfort as my mam used to make it if any of us had the cold- she said that the chicken broth from the bones would perk us up.   I just boiled up the chicken crang when all the meat had been taken off, and then added a mug of lentils to the broth, added an onion, four carrots, and a chicken stock cube.   Willa gave it a 9/10 but said it tasted good and she would give it a 10 if it was thicker! Meanwhile, Nina had missed the Enchiladas because she had her 'denner' at Granny Linda's and also made a super cute craft while she was up there.  When she got back she got her roast chick...

  CHICKEN ENCHILADAS Yesterday Willa asked what a chicken enchilada was.  We usually have fajitas so she wasn't sure what enchilada's was.  I thought I would make it to show her rather than explaining what it was.   We went shopping for the ingredients, and there were no fresh chicken fillets in the Whalsay shops - they are very popular when they come in and disappear fast, so we usually need to be organised and have some in the freezer, and then thaw before cooking.  However there was a whole chicken in JWJ so I decided to go for that, roast it, and then make it into various dishes to make good use of it.    I looked at a few recipes, then asked Willa if she was happy if I tried the same sauce as we used for the Butter Nut squash recipe that she had loved, minus the butternut squash.  She thought that was a good idea so that's what we did. SCRAMBLED EGGS AND COTTAGE CHEESE  This morning I felt like something hot. Mam made scrambled eggs, with a whisked up egg, a heaped tablespoon of cottage cheese mixed in, a splash of skimmed milk, and some chives on top.  I like doing the fresh egg test to check our eggs.  This one sank to the bottom of the bowl so we knew it was fresh to eat.  Willa's Ratings:  9 out of 10  It was a really good taste but it kept falling apart when I was trying to eat it.  I loved the chives and I am wondering if Joanne likes chives? Alison Ratings:  10 out of 10  - I love scrambled eggs.

  NINA's CHOC CHIP COOKIES    Nina wanted to make cookies to celebrate the end of her first term in Primary  Luckily her friend Mia's mam had sent us a super easy recipe and we had all the ingredients already.   Nina's ratings: 'A million out of a hundred'.   Willa's ratings:  9/10 Mam and Dad think they were very tasty and would happily let the lasses make them again, as it is something that they can make by themselves - we just have to do the hot oven bit!   Final comment from Nina:  'We have to make these for Santie'

  BEEF STROGANOFF  Alison here, on behalf of Anthony who made it but not having the feels for typing it up :) And typing what Willa says, who also doesn't have the feels for typing herself.  It's the end of term :) Tonight we had beef stroganoff from the Fraser Reynolds book again.  We substituted natural yogurt for the double cream just for an extra calorie save.   Willa's Ratings. Easy to get ingredients:  Yes, according to Tony we had everything in the house before we started.  Easy to make:  10/10 easy to make Taste: Willa: 'Was really good even though it was spicy - it had a great taste and I loved the bits of steak'.  8/10 Tony agrees, 8 or 9 out of 10.   Will I make it again? BANANA AND OAT BISCUITS   Yesterday we made banana and oat biscuits at my youth club.  Katie helped me and didn't mess it up this time.  BUT she did put an extra drop of honey in.  One of my friends from youth club helped too.  He did a good job.  He did a better job than the adults!  This is the recipe and some pictures.  Willa's Ratings  Easy to get ingredients: 9/10 because Joanne forgot the maple syrup, so switched in honey instead but that's ok. Easy to make: 10/10 I had a lot of fun making it. Taste:  8/10 because the texture was weird. Will I make it again:  Yes I think so. Final comment:  Joanne gets a 4/10 for speaking American (instead of Whalsa).  :)

  FISH PIE Hi Anthony here, yesterday I made this Fish Pie for tea from the Fraser Reynolds book above. I went on the ferry for nightshift so didn't have any but have sampled it today and it's really good. I got good feedback from Alison and Willa saying it was very tasty. It was quite simple to make and easy to follow from the recipe book which we use a lot, it's quite popular in our house. Willa's rating easy to get ingredient's yes 10/10 easy to make 10/10 taste 8/10 it was good but not delicious(we added half and half fresh fish and smoked fish)
