CHICKEN ENCHILADAS




Yesterday Willa asked what a chicken enchilada was.  We usually have fajitas so she wasn't sure what enchilada's was.  I thought I would make it to show her rather than explaining what it was.  

We went shopping for the ingredients, and there were no fresh chicken fillets in the Whalsay shops - they are very popular when they come in and disappear fast, so we usually need to be organised and have some in the freezer, and then thaw before cooking.  However there was a whole chicken in JWJ so I decided to go for that, roast it, and then make it into various dishes to make good use of it.   

I looked at a few recipes, then asked Willa if she was happy if I tried the same sauce as we used for the Butter Nut squash recipe that she had loved, minus the butternut squash.  She thought that was a good idea so that's what we did.

So basically I roasted the chicken until cooked and then carved of about half of the chicken and chopped it up.  Meanwhile I had prepped the usual onions, and peppers that you would have with fajitas, and fried them up with a teaspoon each of:  mild curry powder, garam masala, cumin, turmeric, and chucked the chicken in just before it was done.  (It was still hot, newly roasted).  I didn't want to overdo the cooking oil, so added a bit of water in the frying pan to soak up the spices.

For the sauce I used a can of chopped tomatoes, fresh garlic and fresh ginger, and some mixed herbs, and a vegetable stock pot mixed with quarter pint of water.  

I wrapped up the enchiladas, covered in the sauce, sprinkled cheese on top and stuck it in the oven until the cheese had melted.  We've been using this cheese that I found in the Lerwick Co-op.  I would like to speak to Willa's dietitian about it to see if she thinks it's a good option for us.  She suggested low fat cheese but I can't see that many options in the shops.  This tastes good though so hopefully doesn't have hidden nasties in it.
