BIRTHDAY FANCIES
Life is all about balance, and we need to celebrate the good times! Willa had been busy cooking earlier in the day so Nina took full charge of the cupcakes.
To make 12 cupcakes
3 bananas
50g unsalted butter
180g porridge oats
1 tsp baking powder
1 tsp baking soda
1 large egg
1/2 table spoon of maple syrup
1/2 tsp vanilla extract
130g dark chocolate chips
Method: Mash the bananas, add the melted butter, egg, and vanilla extract, maple syrup and mix well.
Blend the porridge oats until smooth. add the baking soda and baking powder and mix well.
Slowly stir in the oat mix until combined, add a splash of milk if mixture too dry.
Finally add in the dark chocolate chips and spread between 12 muffin cases.
Granny Linda made the Vanilla ones. We had to have one of each so we could rate them :)
Low Calorie Vanilla cupcakes
6 oz SR flour
3 oz caster sugar
3 oz margarine
2 eggs
1/4 pt Greek yoghurt
Icing
1 tub Philadelphia light & mix in a small amount of melted white chocolate

Alison: I thought cupcakes would be good for a party where we had a lot of folk coming along- saves cutting a cake and trying to plate it up for everybody, and also a slightly smaller portion size than a cake. Trying to look for ingredients that make them slightly more healthy than the usual cakes and cupcakes that we used to have so that we don't eat quite so much sugar :) Good having the variety of the choc chip ones and the vanilla ones. Both tasted good I thought!
