Banana pancakes
Alison: We have tried a zillion different pancake recipes. This is one that Nina really likes so this is the one we use at home. It is slightly more 'squishy' in the middle than the ones with refined sugar in them but taste good if you are ok with the texture!
RECIPE
150g SR flour
150g Natural yoghurt
2 eggs
2 bananas
1 tablespoon maple syrup or honey (both taste fine so use your preference)
2 teaspoons baking powder.
Milk of choice if you want to make the mixture a bit more runny. Just add a little bit at the time to get to the batter of choice.
Topping of choice - We like Shetland butter, but you have to set some out to let it soften a bit so that it's easy to cline on.
Anthony: 10/10 'I liked the slightly different taste from a normal sugary pancake. Really good.
Alison: '10/10 I've experimented with wholemeal flour but they really stick to the griddle and the lasses don't really like them. This was a hit with everybody so just sticking with it for now, although happy to try other suggestions!'
