Butternut squash and chickpea curry

 

Yesterday we attempted a recipe that was recommended by a friend who had sourced it from the following website Roasted Butternut Squash and Chickpea Curry - Cupful of Kale

 

Butternut squash and chickpea curry

 

1 Butternut squash chopped into small cubes

1 small onion

1 tin chick peas

1 tin chopped tomatoes

1 veg stock pot and ¼ pint of water

1 small lump of fresh ginger, grated

2 cloves garlic (minced)

Spices (we used 1 teaspoon of each because recipe didn’t specify)

Cumin seeds

Chili powder

Garam Masala

Ground cumin

Ground turmeric

(Recipe also said mild curry powder but we forgot to add and it tasted good without it so…)

Optional - can of light coconut milk or natural greek yoghurt to add at the end.

 

Method:

Roast the butternut squash for about 40 minutes at 180 degrees (we put foil over the top of the baking tray to stop it burning)

Put the onion, garlic, and ginger and fry it in oil of choice (we used coconut oil, unscented). Add all the spices and stir.

Once soft add tomatoes and veg stock and simmer for about 10 minutes

(recipe said blend at this point but we didn’t feel the need to do that)

Add chickpeas and simmer for another 5 to 10 minutes

Add can of light coconut milk or natural yogurt 

Stir in the butternut squash at the end.

Serve with wholegrain rice or side of choice. 

Add some fresh coriander if desired ( we didn’t have any and tasted good as it was)

Willa added some natural yogurt to hers to make it less spicy.

How easy to get ingredients? (8 out of 10 – Tesco had run out of ground turmeric, but mum should have tried local Whalsay shops first as they had it 😊)

Did I enjoy making it? (Mum made this one, mum rates it 7 out of 10 to make, would be higher but needed to keep stirring which was a slight problem as my sister and her friend needed mum to adjust a bike seat outside while it was cooking so mum got a bit stressy at that point 😊)

Did I enjoy eating it?  (10 out of 10 – I loved it)

Would we make it again? Definitely.
