WILLA & KATIE'S BANANA BREAD


Hi, Alison here. Solo write up tonight because Willa sleeping, but got her rating before she fell asleep.  Blog been a bit quiet over the last week, but we've had a diamond wedding anniversary, a surprise visit from Maria, a wedding, a bonfire, sports awards, and Katrena's birthday party as well as the usual Saturday Alice Project this past week, and a visit to the Gilbert Bain hospital for an eye appointment, so we are all a bit exhausted :)

Willa and Katie have been baking however and it was very tasty!!  Willa's cousin Teresa has very kindly printed out lots of nutritious recipes for us - and we've been so flat out we've not got going with many of them yet.  One of them was this tasty Banana Bread.  We are looking forward to trying more of Teresa's recipes in the coming weeks!

WILLA AND KATIE'S BANANA BREAD

Recipe

140g brown rice flour.

30g coconut flour

30g (1 heaped tablespoon of coconut oil) 

10g (1 heaped tablespoon ground flaxseed) 

4 ripe mashed bananas

3 eggs

2 gently heaped tablespoons cashew nut butter

30g coconut sugar (optional)

1. Preheat oven to 180degrees/ 160 fan oven.  Grease or line (with baking parchment) a loaf tin (22x12cm approx).  or square tin 22 x 22cm.  Silicone moulds don't require greasing or lining.

2. Sieve the flours together.  Rub/ stir in the coconut oil, dependent on whether your oil is solid or liquid at room temperature.  Add the flaxseed and mix. 

3. Add the mashed bananas, eggs, cashew nut butter (and sugar if included) and mix thoroughly. Pour into tin/ mould. Bake in the oven for 35 minutes until golden brown. Leave to cool for 10 minutes. then turn out onto a wire rack to cool.  Store in airtight tin in a cool place and eat within 3 days.  (or freeze for a few weeks).

She enjoyed making it, and it tasted yummy.  But she had to tell Katie off because she taste tested the recipe before it was cooked and there was raw eggs in it :) :) 

After it was cooked Katie and Willa came home with it for us to taste test.  It was still warm having not long come out of the oven and Anthony, Nina and me all really enjoyed it.
