Banana pancakes

  Alison:  We have tried a zillion different pancake recipes.  This is one that Nina really likes so this is the one we use at home.  It is slightly more 'squishy' in the middle than the ones with refined sugar in them but taste good if you are ok with the texture!   RECIPE  150g SR flour 150g Natural yoghurt  2 eggs 2 bananas 1 tablespoon maple syrup or honey (both taste fine so use your preference) 2 teaspoons baking powder.  Milk of choice if you want to make the mixture a bit more runny.  Just add a little bit at the time to get to the batter of choice. Baked Oats suggested by Mairi

  This was a recipe that our cousin Mairi sent us!  We adapted it slightly - Thank you Mairi :)  Recipe for 4 portions 1 cup oats 2 bananas 2 eggs 1 or 2 tablespoons of maple syrup (recipe said 2 we used 1)  2 teaspoons baking powder 1 teaspoon of sea salt (optional) Fruit of choice - we used a punnet of raspberries and 2 chopped up apples the first time we made it - used blueberries the next time.  We served with natural yoghurt on the side/ over the top.  Willa: 10/10 it was yummy I liked the raspberries. Anthony:10/10  'This was tasty and really easy to make' Alison: 10/10 'This is an easy, healthy, delicious breakfast or desert. Would totally recommend.'  Nina: 9/10 'I liked it but not really the hot blueberries, I would like to leave them out next time.'

Overnight Oats and Weetabix in our fancy new jars!

     Overnight Weetabix  (Willa typed up the following before school this Monday morning 24/3/25) Overnight oats We made overnight oats. We used melted peanut butter. willa comment 10/10 I think melted peanut butter is better than normal stuff.  I like the smooth stuff not the chunky stuff.  We also made overnight weetabix. Cacao and chia seed pudding

  RECIPE  1/3 glass of chia seeds 1/3 glass of cacao powder 1/4 glass of honey 1 teaspoon of vanilla essence  Fill rest of the glass with unsweetened almond milk or milk of choice Top with fruit of choice  Chill for 2 hours or more Willa's Ratings  It was good 10/10 from me but mummy says it she would like raspberries so we will do that next time.

COOKING AT RADIO SHETLAND!!

Willa was very lucky to be asked to be part of the Shetland's Larder on Radio Shetland. The staff were all super welcoming and friendly, and it was a really good experience to have.   Willa was very excited on the way home from school yesterday, when we told her it was going to be on, saying 'I'm famous!'  As Willa says - 'Give it a go and see what you think' She would love for folk to try some of the things she's made and tell her what you all think of it.  She likes discussing food almost as much as tasting it!
