HOME MADE CHICKEN NUGGETS


Yesterday Willa had friends over for their tea.  We had chicken ramen, and home made chicken nuggets, chips and 'picky' salad sticks of carrot, peppers and cucumber, and popcorn trail mix.  They also had a scoop of ice cream each for pudding.

Willa's auntie Emily gave us a recipe for home made chicken burgers, so we decided to adapt them into nuggets to make it a bit more 'picky' food.

The chicken nuggets vanished fast, and the lasses said they liked it, but they are all very polite so think they might have said that whether they did or not :) 


RECIPE

Chicken fillets to suit amount feeding, bashed before chopping (3 chopped up fillets for us but I would make 4 next time)

Paprika (roughly 2 teaspoons)

Cornflakes (medium bowl full, crushed)

2 beaten eggs

Salt 

Pepper 

Method:

Bash the chicken fillets to make them more tender.  Chop into bite size bits.  Dip in egg.  

For the crumb mixture just crush the cornflakes  (put them in a large freezer bag and roll a rolling pin over them, or crush them any way you want to)  Add the paprika, salt and pepper.  

Add the egg covered chicken into the cornflake mix and mix until covered.  

Put into the air fryer - spray some low calorie cooking spray over the mix to stop it sticking and burning. 

Cook in Air fryer at 180 degrees for 20 minutes.


Emily also suggested this sauce for including in a roll, or a dipping sauce but we never made it this time, although will try it next time. 

The recipe is 40g 0% fat yoghurt, paprika, 5g honey and 10g Sriracha sauce.

Alison:  They tasted good, will definitely make again for a group of bairns, will make more next time since they seemed to like them.  I'm looking forward to hearing what the lasses thought about the chicken ramen too.  We ended up in such a rush for the splash disco that I never had a chance to hear what they thought o it :) Very enjoyable night with very lightsome lasses.  Willa really enjoyed it. I never took any photos to respect her friends privacy and was in too much of a scrit to take pics of the nuggets :)

  ROAST MUTTON FOR TEA!  We never had our 'Sunday denner' yesterday as we were just back from having a sleepover for a wedding, and so just had heated up lentil soup for lunch, and quiche for tea.  We felt like we needed our Sunday fix so Mum and Dad made a 'Monday denner' instead.  Willa's ratings:  Easy to get the ingredients - Yes, we ate local today - we got the mutton from Granny Linda & Da Wilbert, and the eggs for the Yorkshire puddings from them too!
