Apple and Banana Muffins with a Crumble Topping

Image
Apple and Banana Muffins with a Crumble Topping  Alison (mam) here!  We've not been very active on Willa's blog for a while!  We have been doing so many activities out and about that we've kinda forgotten about the blog!  Willa was browsing through our cookbooks the other day though and found this muffin recipe and asked if we could make it.  We both really enjoyed them and so did Anthony so thought it was definitely worth a share! (Nina preferred her banana and dark choc chip muffin recipe which is fair enough).  Willa comments:   Willa 10/10 They tasted delicious. I want to make more soon. I loved the flavour.  Alison 10/10 I think I will make these for the next Sunday teas I'm asked to bake for. Anthony 10/10 They were really good.

Banana pancakes

Image
Alison:  We have tried a zillion different pancake recipes.  This is one that Nina really likes so this is the one we use at home.  It is slightly more 'squishy' in the middle than the ones with refined sugar in them but taste good if you are ok with the texture!   RECIPE  150g SR flour 150g Natural yoghurt  2 eggs 2 bananas 1 tablespoon maple syrup or honey (both taste fine so use your preference) 2 teaspoons baking powder.  Milk of choice if you want to make the mixture a bit more runny.  Just add a little bit at the time to get to the batter of choice. Topping of choice - We like Shetland butter, but you have to set some out to let it soften a bit so that it's easy to cline on.   Anthony: 10/10 'I liked the slightly different taste from a normal sugary pancake.  Really good.  Alison: '10/10 I've experimented with wholemeal flour but they really stick to the griddle and the lasses don't really like them. This was ...

Would totally recommend.'  Nina: 9/10 'I liked it but not really the hot blueberries, I would like to leave them out next time.'

Overnight Oats and Weetabix in our fancy new jars!

Image
Overnight Weetabix  (Willa typed up the following before school this Monday morning 24/3/25) Overnight oats We made overnight oats. We used melted peanut butter. willa comment 10/10 I think melted peanut butter is better than normal stuff.  I like the smooth stuff not the chunky stuff.  We also made overnight weetabix. We used strawberry yoghurt. willa comment  presentation 10/10 taste 10/10                                        Our fancy new jars! Mum's bit:  RECIPE'S  We vary the oats every time because Willa likes variety.  We don't actually have a photo of the one we made with the melted peanut butter that Willa is writing about in the blog because it disappeared before we got one :) We vary between Almond milk, Shetland milk, but mostly start by putting the oats or weetabix in and then pouring the milk so that it completely cove...
