Cacao and chia seed pudding

  RECIPE  1/3 glass of chia seeds 1/3 glass of cacao powder 1/4 glass of honey 1 teaspoon of vanilla essence  Fill rest of the glass with unsweetened almond milk or milk of choice Top with fruit of choice  Chill for 2 hours or more Willa's Ratings  It was good 10/10 from me but mummy says it she would like raspberries so we will do that next time.

COOKING AT RADIO SHETLAND!!

Willa was very lucky to be asked to be part of the Shetland's Larder on Radio Shetland. The staff were all super welcoming and friendly, and it was a really good experience to have.   Willa was very excited on the way home from school yesterday, when we told her it was going to be on, saying 'I'm famous!'  As Willa says - 'Give it a go and see what you think' She would love for folk to try some of the things she's made and tell her what you all think of it.  She likes discussing food almost as much as tasting it!

Frozen Oats Cup

  Willa and I were checking out recipes on Tik Tok and we found this one that Willa wanted to try.  We decided to have it for pudding after Sunday lunch today. RECIPE: 1 cup oats 1/4 cup honey Strawberries 2 bananas  Blueberries Pomegranate seeds Greek Yogurt Freeze for 1 to 2 hours - or longer, whatever the preference.   Willa's comments:  'This is delicious and nutritious. This tastes soooo good.' 10/10 Alison's comments:  Willa made this completely by herself.  All I did was help her to find the ingredients, and put it in the freeze and take it out again.  I really enjoyed this pudding.  It was every bit as good as a cheesecake, but healthier.  Such a novelty having Willa making the pudding for us. 10/10 Nina's comments: 'Can I have custard?' Anthony's comments:  'Yeah yun wis really good.  I will give it a 10/10.'

FIDDLE LESSONS

FIDDLE LESSONS    Willa has started taking fiddle lessons with Eunice Henderson.  As her mum, little did I know that there is no such thing as a left handed fiddle.  After the operation to remove Willa's brain tumour, the right side of Willa's body was initially paralysed.  Willa was unable to speak or move her body.  This meant that there was an intensive period of time with Speech therapists, Occupational therapists, and Physiotherapists to help with Willa's rehabilitation.   With incredibly hard work and amazing determination, Willa made a brilliant recovery, but she still has right sided Hemiplegia (weakness down the right side of her body).  After seeing Willa trying to play the bow with her right arm, Eunice thought that she would get on better if we could switch arms, and play with her left.  This meant a big 'refurb' of the fiddle - which Gilbert Williamson kindly did for us - which was an absolutely super thing to do for us....
